Beccari's Stuffed Cubanelle Peppers

 

·                     8 Beccari’s Cubanelle Peppers

·                     1 1/2 Lbs ground hot sausage

·                     2 Cups mozzarella cheese, shredded

·                     3 – 4 Cups tomato sauce

Remove top and seeds from peppers and wash.  Stuff peppers full with ground hot sausage.  Place stuffed peppers in 9 in. x 13 in. baking dish.  Sprinkle with shredded mozzarella cheese.  Cover with tomato sauce.  Place more shredded mozzarella cheese on top and cover with aluminum foil.  Bake, covered in preheated oven at 350 degrees for 45 minutes.  Remove foil and bake uncovered for approximately 20 to 25 minutes until bubbly and hot.
